Pandox, an international hotel property company, continuously looks to adapt operations to new sustainable methods and modern technology. They partnered up with Winnow to cut food waste at their Crowne Plaza Brussels – Le Palace hotel in Belgium, which daily serves between 1.100 to 1.200 guests.
Within only three months, food waste was reduced by 63%, which led to €44,000 in estimated savings per year. Following data analysis, they implemented changes, such as identifying the overproduction of eggs at breakfast and therefore changing practices to reduce waste by cooking to order.
“The key driver for us to find a solution to cut food waste was the responsibility as a hotel to be aware of the food waste we create and therefore contribute to one of the world’s biggest challenges”, said Caroline Phillipart, F&B Service Manager at Crowne Plaza Brussels.
